Ingredients:
- 200 grams Halal chorizo, sliced
- 400 grams chickpeas (canned, rinsed and drained)
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 400 grams of diced tomatoes (from a can)
- 1 teaspoon smoked paprika powder
- 1 bay leaf
- Salt and pepper to taste
- Olive oil
- Fresh parsley, for garnish
Preparation method:
- Heat a dash of olive oil in a deep pan over medium heat. Add the chorizo and fry until slightly crispy. Remove from the pan and set aside.
- In the same pan, fry the onion and garlic until soft. Add the smoked paprika powder and fry briefly.
- Add the diced tomatoes, chickpeas, bay leaf, fried chorizo, salt and pepper. Bring to a boil, reduce heat and simmer for about 20 minutes.
- Serve warm with bread and garnished with fresh parsley.
