Halal chorizo ​​and chickpea stew

Ingredients:

  • 200 grams Halal chorizo, sliced
  • 400 grams chickpeas (canned, rinsed and drained)
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 400 grams of diced tomatoes (from a can)
  • 1 teaspoon smoked paprika powder
  • 1 bay leaf
  • Salt and pepper to taste
  • Olive oil
  • Fresh parsley, for garnish

Preparation method:

  1. Heat a dash of olive oil in a deep pan over medium heat. Add the chorizo ​​and fry until slightly crispy. Remove from the pan and set aside.
  2. In the same pan, fry the onion and garlic until soft. Add the smoked paprika powder and fry briefly.
  3. Add the diced tomatoes, chickpeas, bay leaf, fried chorizo, salt and pepper. Bring to a boil, reduce heat and simmer for about 20 minutes.
  4. Serve warm with bread and garnished with fresh parsley.
