The Cecina de León IGP is a high-quality product that combines craftsmanship and tradition with halal requirements. This carefully selected beef, taken from the hind legs of the cattle, undergoes a meticulous process of salting and maturing in the fresh air of our mountains, with a minimum maturing time of seven months.
This meat comes from the upper hind leg of the beef, an area known for its rich marbling and deep flavors, resulting in a tender and flavorful end product. This part of the beef offers a perfect balance between fat and meat, which gives the Cecina an unparalleled taste and texture.
Cecina is distinguished by its rich, smoked flavor and firm texture, ideal for tapas or as a luxurious addition to salads and sandwiches. Unlike the softer polished variant, this piece of meat retains its authentic appearance, which provides a more intense taste experience. Both are halal and high in protein, but the topside offers a more unique taste for the culinary adventurer.

Step 1: Slaughtering
The process begins with the Halal slaughter, carried out according to strict Islamic regulations. The meat is then cut with precision.
Step 2: Salting
After cutting, the meat undergoes a salting process. This traditional preservative not only contributes to shelf life, but also enhances the natural flavors of the meat.
Step 3: Drying
The meat is desalted, after which the drying process begins in the fresh air of the León mountains. This step is crucial for the development of the texture and aroma.
Step 4: Smoking
The meat is carefully smoked with oak wood for 12 to 16 days. This smoking process gives the meat a unique and distinctive aroma that takes the taste to a higher level.
Step 5: Maturation
As a final step, the meat is covered with a layer of extra virgin olive oil. This protects the meat and adds a subtle flavor. The meat is then dried and matured in our cellars for seven months.

Why is the fat edge of the meat yellow?
The yellow tint of the fat edge is due to the animal's diet, rich in carotene from grass. This is a natural process and does not affect the quality or taste of the meat. It actually indicates a healthy, well-fed animal, which is good for its nutritional value and taste.
Why does the color of the meat change after it is opened?
Browning of the meat after opening the package is a natural process and has nothing to do with freshness or quality. This happens due to the reaction of oxygen with myoglobin, a protein in the meat, which gives it a browner hue, just as an apple turns brown if you leave it alone. Our Halal meat is very rich in protein, which is good for your health. Don't worry, the color change doesn't mean the meat has gone bad.
